Sous Chef – Restaurant, Cambridge

Salary: £34,000 – £35,000 plus tips and bonus (OTE £43,000+)

Hours: Full-time, 45 hours per week, Sunday’s and Monday’s off and closed at Christmas!

BLW Recruitment is working with a premium restaurant located in the heart of Cambridge, known for its exceptional dining experiences and innovative approach to food and service. Based in an iconic, listed building, in a prime location, this venue features a refined restaurant, vibrant bar area, private dining options, and unique event spaces.

We are currently seeking an experienced Sous Chef to join a passionate and professional kitchen brigade. This is a fantastic opportunity for a talented chef who thrives in a high-end, fast-paced environment and is ready to take the next step in their career.

Key Responsibilities:

• Support the Head Chef in daily kitchen operations and lead the team in their absence
• Ensure consistently high standards of food quality, presentation, and hygiene
• Collaborate on the creation and execution of seasonal menus
• Manage supplier relationships and quality control on all food deliveries
• Oversee stock levels, portion control, and waste reduction
• Ensure full compliance with Food Safety standards, including HACCP, COSHH, and allergen management
• Train, mentor, and motivate junior kitchen staff

Candidate Requirements:

• Minimum Level 3 Food Safety qualification
• NVQ/SVQ Level 3 in Professional Cookery or equivalent experience
• City & Guilds qualification in Professional Cookery
• Strong working knowledge of food hygiene legislation and current industry standards
• Confident in stock management and supplier negotiation
• Commercial awareness with an understanding of gross profit margins
• Passionate about food, trends, and seasonality
• Positive, adaptable, and a strong team player
• Excellent communication skills and attention to detail
• Smart, professional appearance and fluent in spoken and written English
